doc: Update initrd section to refer to the right Guile variable.
This is a follow-up to commit 57833803b446484b6f413fb883b2156933c38639.

* doc/guix.texi (Initial RAM Disk): Refer to "%guile-3.0-static-stripped"
instead of "%guile-static-stripped".
