gnu: ncurses: Add "doc" output.
* gnu/packages/ncurses.scm (ncurses)[outputs]: New field.
[arguments] <configure>: Replace standard 'configure' phase.
<remove-shebang-phase>: Remove "mandir=" line from 'ncursesw6-config'.
