git: 'update-cached-checkout' supports a 'tag-or-commit' type of ref.
* guix/git.scm (switch-to-ref)[obj]: Wrap in 'resolve' lambda.  Add
'tag-or-commit' case.
(update-cached-checkout): Document it.
